I'm Taniguchi and in the second year of master course, but this blog is first time for me. :(
We (Kawasaki(B4), Taniguchi(M2), Prof. Fukusaki, Nakano(D1), Hayashi(M1)) went to Kikumasamune (Japanese sake company in Nada city, Kyoto) to see the brewery and sensory evaluation room.
First, we change our clothes to lab coats and saw the various fermentation equipment and aging tank following the manufacturing process. We could listened kind explanation about the details of each process.
Then, tasting samples were provided!
Next, we tried the sensory evaluation.
6 kinds of sake samples were provided. Among of them, 3 samples were Kimoto, and other 3 were different type. However, I couldn't distinguish two types of sake... If there were no tasting samples, it might be possible! In the sensory evaluation, I already might get a little drunk. :-P
We were able to see various things such as the barrel manufacture, analytical machines and the view of Mt. Rokko from the roof. We had a very nice time.
